Every great drink starts with a memory. Growing up, summer meant one thing—playing football until sunset with my friends. On the way home, we’d climb into an old uncle’s backyard to pluck ripe starfruits straight from the tree. They were crisp, tart, and tasted like childhood freedom. Today, I’ve transformed that memory into a cocktail. The hero of my drink is 60 ml of Bacardi Carta Blanca, a rum created by Don Facundo Bacardí in 1862, Cuba. His vision was to create a lighter, smoother rum, and that innovation continues to inspire bartenders around the world. Bacardi’s delicate notes of vanilla, citrus, and tropical fruit beautifully support the flavours I’ve chosen. To capture my childhood memory, I use a lacto-fermented starfruit cordial. Fermentation enhances the fruit’s natural acidity while adding depth and complexity. I pair that with raw papaya wine, bringing gentle fruitiness, subtle tannins, and a clean, dry finish that keeps the cocktail balanced. Together, these ingredients create a drink that is bright, refreshing, and layerdwhere the smoothness of Bacardi meets the vibrant flavours of tropical fruit. This cocktail isn’t just about flavour; it’s about turning a simple childhood memory into an experience worth sharing.
