I'm Ashish Pawar, Heading beverage operations at Roofberries and mitron prodly representing Roofberries Cocktail Bar in FUTURE ICONS 2026. When we think of the elements, we think of earth, water, fire, and air. But ancient philosophers believed there was one more... Aether. The invisible element that brought harmony to everything else. I realized that's exactly what the future of cocktails should be. Today, we celebrate innovation by adding more, more ingredients, more techniques, more complexity. But I believe true innovation is knowing what not to add. So I built AETHER around one idea. Every ingredient must earn its place. At its heart is •Patrón Reposado.• Clarified red grape and jasmine add elegance. Pandan molasses embraces its natural vanilla and oak. Malic acid brings precision. Sandalwood leaves a quiet memory. Fresh grapefruit oils create the first impression. Individually, they're simple. Together, they're harmony. To me, a FUTURE ICON isn't a cocktail that impresses for one night. It's a cocktail that bartenders will still be proud to make ten years from now because it's timeless, purposeful, and unforgettable.
