My Future Icons cocktail is called CO₂ – Cycle of Origins. Most people associate CO₂ with pollution, but I chose to see it differently. Carbon dioxide is essential for photosynthesis, allowing plants to grow and produce the ingredients we use every day. Without this natural cycle, there would be no harvest, no local produce, and no cocktails. This idea inspired me to celebrate the local ingredients of Maharashtra. Jowar represents resilience, growing in challenging conditions while supporting generations of farmers. Amba Haldi symbolises hidden potential, reminding us that true growth often happens beneath the surface before it is recognised. Kokum reflects the warmth and hospitality of the Konkan region, bringing balance and refreshment to my drink. To support this story, I created a jowar crisp garnish, transforming the same grain into a beautiful edible element. It represents my belief that sustainability is not just about reducing waste, but about respecting every ingredient and finding value in every part of it. For me, a Future Icon is someone who honours tradition, embraces innovation, and inspires positive change. Through CO₂ – Cycle of Origins, I hope to show that every great cocktail begins with nature, continues through the hands of farmers.
