Competing for Future Icon 2026

Every classic has an identity. The challenge was to reinterpret one—not by changing what it is, but by shifting where its inspiration comes from. Future Icon challenged me to look at a classic differently—not by changing its identity, but by changing the inspiration behind it. “Nutty Barrel” is my answer: a Carajillo reimagined through the flavours, memories and craftsmanship of India. The Carajillo inspired me with its timeless harmony between coffee, sweetness and spirit. For this interpretation, I wanted to move its inspiration from Spain to India while keeping the soul of the classic intact. Dewar’s 12 Year Old, washed with peanut butter, brings richness, texture and roasted nuttiness. House-made vanilla tincture replaces the traditional licor 43 element with a more delicate aromatic sweetness, while jaggery and toasted sesame introduce warmth, depth and a distinctly Indian sense of nostalgia. The jaggery-sesame coffee foam completes the drink, bringing the aroma of coffee back to the forefront and preserving the heart of the Carajillo. A classic gave me the foundation. India gave me the inspiration. My craft gave it a new identity. And this is how I see the future—one glass at a time.
