The most valuable ingredient in any great drink isn't hidden in the bottle. It's time. Every morning begins with a walk through the local market, where we choose fresh ingredients for our daily banchan. Inspired by that ritual, I gave those everyday ingredients a new journey through lacto-fermentation. Amla brings bright acidity, cucumber captures the freshness of the market, and achari chilli softens into gentle warmth with time. A touch of kioke soy sauce, matured slowly in traditional wooden vats, adds depth and umami. It's the same philosophy behind Dewar's. Time in oak casks doesn't just mature the whisky—it shapes its character with balance, depth, and harmony. Because the greatest ingredient in every remarkable drink isn't just what's inside the glass. It's the time that transforms it.
