01 · The Difference

Why it is
crushed
twice

Most tequila takes one road from baked agave to juice. Here it takes two — a modern roller mill and a two-ton volcanic tahona stone. Each ferments and distils separately, then comes back together.

The old road

A two-ton volcanic wheel turns slowly over the baked agave, crushing fibre and juice together the way it was done for centuries. Earthier, rounder, unmistakably agave — and almost no distillery still keeps one turning.

In 1989 two travellers went looking for the finest tequila in Mexico and found a small distillery in Los Altos de Jalisco willing to make it their way — by hand, at their pace, with nothing added. Hacienda Patrón has made nothing else since.

Five years in the field

Jimadores cut only the ripest 100% Blue Weber Agave — at least five years of growth, chosen for the highest sugar.

Seventy-nine hours in brick

Hand-chopped agave bakes in traditional clay brick ovens, steaming and resting in turn for 79 hours so it cooks through and never scorches.

Two crushes, two ferments

Mill juice and tahona juice ferment apart in small pine tanks for three days, then distil twice in small copper pot stills before they are blended.

Sixty pairs of hands

Each bottle is hand-blown, hand-filled, hand-corked and inspected. Over sixty pairs of hands touch it before it leaves the hacienda.
