Inspired by the timeless Daiquiri, this cocktail pays tribute to Bacardí’s Cuban heritage while embracing modern mixology. At its heart is Bacardí Carta Blanca, a rum born in Cuba and celebrated for its clean, elegant character. Instead of the classic citrus balance, I use an acid-adjusted pineapple & tonka bean cordial, where the tropical sweetness of pineapple meets the warm, vanilla-like spice of tonka bean. The acidity is carefully calibrated to mirror the brightness of fresh citrus, preserving the soul of a Daiquiri while creating a richer, more layered experience. Fresh lime enhances the vibrant acidity, while a touch of sugar rounds the palate, staying true to the classic’s minimalist philosophy. A delicate lemon curd paint on the glass adds a visual flourish and an extra burst of citrus aroma with every sip. This is not a reinvention of the Daiquiri—it is a respectful evolution. A cocktail that bridges Cuban tradition with contemporary technique, proving that even the most iconic classics can tell a new story without losing their identity.
Charcoal-filtered and oak-rested to Don Facundo’s founding blend — light, mixable and endlessly versatile.
