How It Tastes

Twelve years ago, I folded my first apron and stepped behind a bar that smelled of citrus peels and polished oak. I didn't know it then, but I was beginning a maturation process much like the spirit I pour today. "Oak & Echoes" is a modern classic inspired by the philosophy of time, memory, and the art of blending. The cocktail is built on a central parallel: the twelve years it takes to double-age Dewar’s 12-Year-Old, and the twelve years I have spent mastering my craft. The whisky acts as the "Oak"—the foundational structure and patience instilled in me by my earliest mentors. The modifiers are the "Echoes," sensory memories of my journey. A homemade apricot syrup is an echo of my roots, bringing a stubborn sweetness that highlights the whisky’s orchard notes. A morel tincture echoes my off-shifts spent foraging, an earthy reminder that calculated risks yield great rewards. Finally, the truffle espuma reflects my time in European fine-dining kitchens, where craft becomes ceremony. The precise line dusted across the foam represents a single oak growth ring, capturing twelve years of memories, patience, and hospitality seamlessly blended into one glass.
The world’s most awarded blended Scotch — married a second time in oak for a signature honeyed finish.
