My inspiration comes from the peach tree in Kung Fu Panda. The peach reminds us that good things take time. It represents patience, growth, and believing in the future. I wanted this cocktail to tell a story through time. The past is represented by the classic Rob Roy. It’s a drink with history that has inspired bartenders for generations. The present is my interpretation. I use Dewar’s 12 Year Old with dry sherry, a peach shrub, and aromatic bitters. The peach shrub brings fresh fruit and bright acidity, giving new life to a timeless classic while respecting its roots. The future is represented by the peach seed. Every great tree starts from a single seed. In the same way, every new idea starts with one small step. I hope this cocktail reminds us to keep learning, keep creating, and keep growing. For me, the future of cocktails is not about forgetting the classics. It’s about respecting the past, enjoying the present, and planting new ideas for the future.
