“A journey through the still waters of Kerala, captured in a glass.” My inspiration for Backwater comes from the beautiful backwaters of Kerala—where coconut palms surround calm waterways, the air is filled with the aroma of fresh curry leaves, and life moves at a slower, more peaceful rhythm. I wanted to translate that experience into a cocktail. The journey begins with white rum washed with coconut oil, creating a smooth, silky spirit with a subtle richness of coconut. Curry leaves bring a fresh, green and distinctly Indian aroma, representing the lush landscape surrounding the backwaters. Coconut syrup adds a soft tropical sweetness, while white ginger ale brings freshness, effervescence and movement—like the gentle ripples travelling across the water. Finally, the cocktail is finished with coconut air, creating a light and delicate layer on top. It represents the morning mist that floats above the backwaters, adding an almost weightless finish to the drink. For me, Backwater is about contrast—stillness and movement, earthiness and freshness, tradition and modern technique. It is not just a cocktail inspired by Kerala. It is Kerala, reimagined in a glass.
